  • ½ cup of Ekin bulgur
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 tbsp tomato paste
  • 1 onion
  • 3 cloves of garlic
  • 5 red bell peppers
  • 4 tomatoes
  • 1 cup of milk
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp dried mint
How is it done?
  1. Roast the bell peppers and tomatoes in a preheated 200°C oven for 35 minutes.
  2. Melt the butter in a deep pot and sauté the flour for a bit.
  3. Then add the onion, garlic, tomato paste, and Ekin bulgur.
  4. After mixing all the ingredients, add the roasted peppers and tomatoes.
  5. Pour in the milk and boil until the bulgur is cooked.
  6. Once the bulgur is softened, blend the soup until smooth.
  7. Add the spices and mix well.
  8. Serve hot.
