Fresh Green Beans and Zucchini Pilaf from Ekin

  • 2 cups rice
  • ½ kg fresh green beans
  • 2 zucchinis
  • 1 onion
  • 1 pinch of nigella seeds
  • Olive oil
  • Salt
  • Black pepper
How is it done?
  1. Trim the green beans and boil them in a little water for 7-8 minutes.
  2. Slice the zucchinis and set aside.
  3. Dice the onion and sauté in olive oil.
  4. Add the previously washed Ekin rice and sauté for another 3-4 minutes.
  5. Add the green beans and zucchinis.
  6. Add the cumin seeds and spices, and add enough hot water to cover the mixture, then cover with a lid.
  7. Cook for another 7-8 minutes, then let it sit to rest.
  8. Garnish with finely chopped dill and parsley before serving.
