Ekin’s Lentil Soup with Vegetables

Materials for the Recipe
  • 1.5 cups red lentils
  • 3 stalks of celery
  • 2-3 leeks
  • 2 cloves of garlic
  • 2 potatoes
  • 1.5 liters of beef broth
  • 2-3 sprigs of rosemary
  • Toasted stale bread slices
  • Salt
  • Black pepper
  • Turmeric
  • 2 leeks
  • Ground red pepper
  • Flaked red pepper
  • Olive oil
How is it done?
  1. Pour olive oil in a pot.
  2. Randomly chop celery stalks and leeks, and add them to the pot.
  3. Then add garlic and when it becomes sautéed, add the chopped potatoes.
  4. Finally, add Ekin red lentils, beef broth and spices to the pot, cover it and leave it for boiling.
  5. In a separate pan, sauté the finely-chopped leeks, ground red pepper, flaked red pepper and olive oil lightly and set aside.
  6. Puree the boiling soup with a blender. Take it to a bowl.
  7. Garnish it with the prepared leek oil sauce and rosemary.
  8. Serve it with crispy toasted bread slices.
